This Grand Traité des herbes aromatiques is the essential companion to the Grand Traité des épices. While it covers the "fine herbs" widely found in our gardens, such as chives, basil, mint, and thyme, it also focuses on certain plants such as coriander, fennel, and lovage, presented in the first volume for their "spice" parts (seeds, bark, or roots), but whose use of other elements, particularly the leaves, was not considered. This volume also covers many plants from our forests and paths, provided they are aromatic and used in cooking.

Thus, more than ninety aromatic herbs are presented in this book, including some specifically for their use in herbal teas or liqueurs. All are easily found on market stalls or in the wild.

This book, like the previous one, is both a botanical and a historical book, covering the discovery of the plant and its ancient and current use in medicine, but especially in cooking. More than one hundred and forty recipes allow readers to discover all their benefits, both for health and the palate!
